We are not a family with recipes that have been passed down from generation to generation, well until now. We, my husband and I, have two recipes that our whole extended family loves. I am going to share one of them with you today. This recipe for banana bread is easy, foolproof and delicious. I have even attached a video. Alan demonstrates how he does it. Have fun!
This recipe evolved from one bread to two. It has become such a staple for our daily breakfast that making one bread came too often. It’s also one of our personal gift items.
Makes 2 Loaves - Two 9” Loaf Pans
Ingredients
- 5 Bananas mashed (potato masher, or you can do it with a fork)
- 2/3 cup canola oil
- 1 1/2 cups sugar
- 2 eggs
- 2 tsp baking soda
- 2 tsp vanilla extract
- 2 pinches salt
Directions
- Mix ingredients until smooth. There will still be banana lumps.
- Add 3 cups all purpose flour. Mix until smooth.
- Mix in 1 cup (more or less) chopped craisins, or any other add in. (choc chips, walnuts etc.).
- Spray oil into loaf pans to grease them.
- Pour mixture into two 9” loaf pane. Bake 350 degrees for 56 minutes.
- Test with tooth pick. Depends on your oven. Could be couple of minutes more or less.
